Deep Fried Friday: MoonPies

Deep Fried MoonPies
Makes 4 to 6 servings
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup milk
- 2 large eggs
- 1 Tbsp. sugar
- 1/8 tsp. salt
- 4 Moon Pies
- 2 cups Japanese breadcrumbs (Panko)
- Vegetable oil
Preparation:
1. Whisk together first 5 ingredients in a medium bowl. Dip Moon Pies in batter until coated and dredge in breadcrumbs.
2. Pour oil to a depth of 2 inches; heat over medium heat to 350°. Fry Moon Pies in batches, 20 to 30 seconds on each side or until golden brown. Drain on a wire rack over paper towel. Serve whole or cut into quarters.
