I call it magic. One pork shoulder roast, a few pantry ingredients, and eight hours on low effortlessly produces the most succulent and tender pork, just as if you waved a magic wand. Although slow cooking is synonymous with fall and winter, as summer beckons, my slow cooker is the workhorse that keeps my kitchen cool. This recipe yields a gracious plenty, making it a wise choice for this New Sunday Supper.
The cooked pork shoulder, also known as pork butt or Boston butt, practically shreds itself when approached with a fork. Serve it with snappy Easy Pickled Sweet Onions and Peppers and a spoonful of the pickle brine, something green, and a side of moist cornbread on Sunday, reserving the extra pork for two additional meals.
