I grill/smoke everything! Most recently, it was BBQ pulled pork quesadillas. I shredded leftover pulled pork and piled it between two tortillas with shredded cheese. Throw them on a hot pizza stone in a ceramic cooker for ten minutes and you’ve got an easy and delicious Saturday night meal. I served them with a grilled corn and scallion salad with lime/jalapeno dressing.

Grilling is not only the way to cook delicious foods, but also is a wonderful ‘excuse’ to gather together with family and friends. With grilling the possibilities are endless, from fish, chicken, steaks, hamburgers and hot dogs, to bell peppers, corn, onions, and, one of my favorites, eggplant. Add to this a few good friends and you are guaranteed to have great time and create fun memories. Once, during hurricane season, when the power was out, we managed to heat up frozen chocolate chip waffles for breakfast on our grill. By the way, they were delicious :)

We like to do a lot of grilling during the summer time. We love grilling pork short ribs, corn on the cob, and a mixed vegetable medley so that there is a variety of things. We are learning how to do desserts but have not yet been successful in producing a grilled cake. In all we would put it to good use because cooking together makes great family memories.
